Roasted Cherry Tomatoes

 *Creamy, tangy, and bursting with freshness—this gourmet toast is a perfect balance of textures and flavors!*  



Ingredients (Serves 1): 

- 2 slices rustic sourdough or whole-grain bread (toasted)  

- ½ ripe avocado (sliced or mashed)  

- ¼ cup whipped cottage cheese (see tip below)  

- ½ cup cherry tomatoes  

- 1 tsp olive oil  

- Handful of arugula(or baby spinach)  

- 1 small garlic clove(optional, for rubbing)  

- Salt & black pepper to taste  

- Red pepper flakes or fresh herbs ( optional garnish)  


Instructions:


1. Roast the Tomatoes:

- Preheat oven to  375°F (190°C).  

- Toss cherry tomatoes with olive oil, salt, and pepper. Spread on a baking sheet and roast for  20-25 min  until blistered and juicy.  


2. Toast the Bread: 

- Lightly toast bread until golden and crisp. For extra flavor, rub with a  cut garlic clove while warm.  


3. Whip the Cottage Cheese (if needed):  

- Blend  ¼ cup cottage cheese  with a splash of milk or lemon juice until smooth and creamy (skip if using pre-whipped).  


4. Assemble:

1. Layer 1: Spread mashed avocado on toast.  

2. Layer 2: Add a handful of peppery arugula.  

3. Layer 3:Dollop whipped cottage cheese over greens.  

4. Finishing Touch: Top with roasted tomatoes, a drizzle of olive oil, and a pinch of flaky salt + black pepper.  


Serving Suggestion:  

- Garnish with  fresh basil, microgreens, or a sprinkle of chili flakes  for a kick.  

- Pair with a poached egg for extra protein!
