Glazed Honey Pineapple Salmon

Sweet, sticky, and bursting with tropical flavor—this easy salmon dish is a weeknight showstopper. 





Ingredients (Serves 4):

- 4 salmon fillets (6 oz each, skin-on or off)  

- ½ cup pineapple juice (fresh or bottled)  

- ¼ cup honey  

- 2 tbsp soy sauce (or coconut aminos for GF)  

- 1 tbsp olive oil  

- 2 garlic cloves, minced  

- 1 tbspfresh ginger, grated  

- 1 cup fresh pineapple, diced  

- Salt & black pepper to taste  


For Garnish:  

- Fresh cilantro, chopped  

- Lime wedges  

- Toasted sesame seeds (optional)

Instructions:

1. Marinate the Salmon (15-30 min): 

- Whisk together pineapple juice, honey, soy sauce, olive oil, garlic, ginger, red pepper flakes, salt, and pepper in a bowl.  

- Place salmon in a shallow dish and coat evenly with **¾ of the marinade** (*reserve the rest*). Cover and refrigerate.  


2. Cook the Salmon:

- Heat a  large nonstick skillet  over medium-high. Remove salmon from marinade (shake off excess) and sear  skin-side down for 4-5 minutes  until crispy. Flip and cook  3-4 minutes  more until flaky. Transfer to a plate.  


3. Glaze & Finish:  

- Pour the  reserved marinade  into the skillet and simmer  2-3 minutes  until slightly thickened.  

- Add diced pineapple and toss  1 minute  just to warm through.  


4. Serve: 

- Drizzle glaze over salmon, garnish with  cilantro, sesame seeds, and lime wedges

For extra caramelization: Broil salmon for 1-2 minutes after glazing.  

Substitute: Use mango or orange juice for a twist.
