Creamy Greek Chicken

Garlic-Herb Greek Chicken:

  • 1 lb boneless, skinless chicken breasts, sliced into ½-inch cutlets or bite-sized pieces

  • 2 tbsp olive oil

  • 4 cloves garlic, minced

  • 1 tbsp dried Greek seasoning (oregano, thyme, basil, marjoram)

  • Salt & freshly cracked black pepper to taste


 Crispy Roasted Broccolini:

  • 1 bunch (about 12 oz) broccolini, trimmed

  • 2 tbsp olive oil

  • 3 cloves garlic, thinly sliced

  • Salt & freshly cracked black pepper to taste


 Creamy Alfredo Sauce:

  • 2 tbsp unsalted butter

  • 3 cloves garlic, minced

  • 1½ cups heavy cream

  • 1 cup grated Parmesan cheese

  • Salt & freshly cracked black pepper to taste


 Zesty Lemon Whipped Feta:

  • 4 oz feta cheese, crumbled

  • ¼ cup plain Greek yogurt (full-fat)

  • 2 tbsp fresh lemon juice

  • 1 tsp lemon zest

  • 1 tbsp olive oil


 Lemon Hot Honey & Toasted Pine Nuts:

  • 2 tbsp pine nuts

  • 3 tbsp honey

  • 1 tbsp fresh lemon juice

  • 1–2 tsp hot sauce (adjust to taste)


 Instructions:

  1. Roast Broccolini:
    Preheat oven to 200°C (400°F). Toss broccolini with olive oil, sliced garlic, salt, and pepper. Spread on a parchment-lined baking sheet. Roast 15–20 minutes until crispy and tender.

  2. Marinate & Cook Chicken:
    Mix chicken with olive oil, minced garlic, Greek seasoning, salt, and pepper. Marinate 15+ minutes. Cook in a skillet over medium-high heat until golden and cooked through, 5–7 minutes.

  3. Make Lemon Whipped Feta:
    Blend feta, Greek yogurt, lemon juice, lemon zest, and olive oil until smooth and creamy. Set aside.

  4. Make Alfredo Sauce:
    In a pan, melt butter. Add garlic and sauté 30 seconds. Add cream, simmer, and stir in Parmesan until melted and smooth. Season to taste.

  5. Toast Pine Nuts:
    In a dry pan over medium-low, toast pine nuts 2–4 minutes until golden. Remove immediately.

  6. Make Lemon Hot Honey:
    Whisk together honey, lemon juice, and hot sauce in a small bowl.

  7. Assemble Bowls:
    Stir chicken into Alfredo sauce. Dollop in whipped feta and swirl (don’t fully mix).
    Plate broccolini, top with chicken Alfredo mix, drizzle with lemon hot honey, and sprinkle with pine nuts.
