Ingredients (serves 4):
- 2 large ripe tomatoes, cut into wedges
- 1 cucumber, sliced into half-moons
- 1 green bell pepper , sliced
- 1 small red onion, thinly sliced
- 1 cup Kalamata olives (or other Greek olives)
- 200g (7 oz) feta cheese, cut into thick slices or a block
- 2 tbsp extra virgin olive oil
- 1 tbsp red wine vinegar (optional)
- 1 tsp dried oregano
- Salt & pepper to taste
Instructions
1. Prepare Vegetables: In a large bowl, combine tomatoes, cucumber, bell pepper, and red onion.
2. Add Olives & Feta: Scatter olives on top and place the feta cheese in large chunks (don’t crumble it).
3. Dress the Salad: Drizzle with olive oil and vinegar (if using). Sprinkle oregano, salt, and pepper.
4. Serve: Toss gently just before eating to keep the feta intact.
Tips for Authenticity
- No lettuce! Traditional Greek salad doesn’t include it.
- Use high-quality feta (preferably Greek, in brine).
- Serve with crusty bread to soak up the juices.
