BLUEBERRY and VANILLA SWIRL ICE CREAM PARFAIT



Prep Time: 15 mins | Cook Time: 10 mins | Total Time: 25 mins (+ cooling)

INGREDIENTS 

For the Blueberry Sauce: 

- 1½ cups fresh or frozen blueberries  

- ¼ cup sugar (adjust to taste)  

- 1 tbsp lemon juice (brightens flavor)  

- 1 tsp cornstarch + 2 tsp water (optional, for thicker sauce)  


For the Parfait Layers: 

- 4 cups vanilla ice cream (softened slightly)  

- 2 cups blueberry ice cream or sorbet (or sub more vanilla + extra sauce)  

- 1 cup fresh blueberries/blackberries (for topping)  

- Whipped cream (optional)  

- Crushed graham crackers or shortbread cookies (for crunch)  


Optional Enhancements:  

- Drizzle of honey or white chocolate sauce  

- Fresh mint leaves for garnish

 INSTRUCTIONS 


1. Make the Blueberry Sauce  

1. Cook berries: In a saucepan, combine blueberries, sugar, and lemon juice. Heat over medium flame, stirring occasionally, until berries burst (about 7–10 mins).  

2. Thicken (optional): For a syrup-like consistency, mix cornstarch with water, stir into the sauce, and simmer  1 more minute.  

3. Cool: Remove from heat and let cool completely (transfer to a jar to speed up cooling).  


2. Assemble the Parfaits  

1. Layer 1: In a tall glass, add a scoop of  vanilla ice cream.  

2. Layer 2: Drizzle with  blueberry sauce (about 1 tbsp).  

3. Layer 3: Add a scoop of  blueberry ice cream/sorbet.  

4. Repeat:Alternate layers until the glass is full.  

5. Swirl:Use a skewer or spoon to gently marble the layers (don’t overmix!).  


3. Top & Serve

- Fresh fruit: Pile on blueberries and blackberries.  

- Crunch: Sprinkle crushed cookies or graham crackers.  

- Indulge (optional): Add whipped cream and a drizzle of honey.  


 Serve immediately  for a soft, creamy texture, or freeze for 10 mins if needed.
