A quick and healthy stir-fry with fresh veggies!

Ingredients:

For the Shrimp & Veggies:
  • 1 lb shrimp, peeled & deveined
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • ½ teaspoon ginger, grated
For the Sauce:
  • ¼ cup soy sauce
  • 1 tablespoon honey or brown sugar
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch mixed with 2 tablespoons water

Instructions:

  1. Cook the Shrimp:

    • Heat oil in a pan, add shrimp, and cook for 2-3 minutes per side. Remove and set aside.
  2. Stir-Fry the Veggies:

    • Add garlic, ginger, bell pepper, broccoli, and carrot. Stir-fry for 3-4 minutes.
  3. Add Sauce & Serve:

    • Stir in sauce and return shrimp to the pan. Cook for 1-2 more minutes until thickened.
    • Serve over rice or noodles!

Serving Tips:

For Garlic Butter Shrimp: Add Parmesan cheese for extra richness.
For Tuna Melt: Swap bread for a croissant for a buttery twist.
