Eggplant Parmesan 🍆🧀🍅

 



A delicious baked eggplant dish layered with marinara sauce and cheese!

Ingredients:

  • 1 large eggplant, sliced into rounds
  • 1 cup breadcrumbs
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 2 eggs, beaten
  • 1 ½ cups marinara sauce
  • 1 cup shredded mozzarella
  • ¼ cup grated Parmesan
  • 2 tablespoons olive oil

Instructions:

  1. Prepare the Eggplant:

    • Dip eggplant slices in beaten egg, then coat with seasoned breadcrumbs.
  2. Bake the Eggplant:

    • Arrange on a baking sheet, drizzle with olive oil, and bake at 400°F (200°C) for 20 minutes, flipping once.
  3. Assemble & Bake:

    • In a baking dish, layer marinara sauce, eggplant, and cheese.
    • Bake for 15 more minutes until cheese is melted.
