Vegetable Fried Rice

A quick and delicious stir-fried rice dish packed with veggies, soy sauce, and scrambled eggs!

Ingredients:

  • 2 cups cooked rice (preferably day-old)
  • 1 tablespoon oil (sesame or vegetable)
  • ½ cup diced carrots
  • ½ cup peas
  • ½ cup bell pepper, diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 1 teaspoon sesame oil (optional)
  • ½ teaspoon black pepper

Instructions:

  1. Sauté the Vegetables:

    • Heat oil in a pan, add onions, garlic, carrots, and bell pepper. Cook for 3 minutes.
  2. Scramble the Eggs:

    • Push veggies to the side, pour in beaten eggs, and scramble.
  3. Fry the Rice:

    • Add rice, peas, soy sauce, and black pepper. Stir-fry for 5 minutes.
    • Drizzle with sesame oil and serve!
